Balsamic Glazed Salmon from Gracefully Vintage!

This week, I’m featuring a blogger I adore, and her tasty glazed salmon recipe!

Meet pretty Kayla, of the blog Gracefully Vintage, who hails from Sydney, Australia. I enjoy looking at her beautiful Instagram feed which features her vintage outfits and a peek into her life, especially when  she’s enjoying summer and I’m freezing on the other side of the world.

Balsamic Glazed Salmon and Steamed Veggies

Balsamic Glaze

“This glaze is great on fresh salmon, salad… Or most things really! It’s so delicious. I served it on pan fried salmon, sweet mashed potato (Kumera) and various steamed vegetables.” – Kayla

Ingredients:

·         ¼ cup Balsamic Vinegar

·         1 & ½ Tablespoons of fresh lemon

·         1 Tablespoon of Brown Sugar

·         ¼ cup of water

Method:

1.    Combine vinegar, water, lemon juice and brown sugar in a bowl and mix.

2.    Simmer in a pan to reduce mix for 2-3 minutes or until a little thicker.

For the rest of your meal:

Peel, cut and boil 2 sweet potatoes until fork -tender (about 7-10 minutes). Mash with a bit of soy or regular butter or margarine.

Steam 2 cups of your favorite veggies in a steamer or microwave in a microwave-safe container, covered, with 3 tbsp water, stirring once, for 4-6 minutes or until hot and tender.

Heat a large pan over medium-high heat with olive oil. Place 2 filets of salmon skin side down in pan and reduce heat to medium-low. Cook undisturbed for about 7 minutes or until well-browned and cooked about three quarters of the way through. Turn fillets, and cook about 3 minutes more, or until just barely pink in the center.

Serve salmon immediately  over a bed of mashed sweet potatoes and along with the steamed veggies. Top salmon with glaze.

  1. I tried Kayla’s recipe the other day (she was kind enough to share it with me when I saw a picture of her meal on instagram!) and it is DELICIOUS! I will be using this glaze every time I make salmon, so so good! Everyone should try it :D
