It’s the Holiday season, and life has been pretty hectic with a cross-country move into a somewhat nomadic lifestyle of freelance and contract work for me and Husband. Currently, we’re stationed in Atlanta in my parents’ winter home, which they generously loaned us through the season.

WTF Polenta? Recipes

Polenta is one of those things I see on menus and The Food Network from time to time, and I’ve always been kind of attracted to the idea of trying it but never did anything proactive about it or researched it.

Last week, I spotted some at the market, in one of those rolls, and threw it into my cart on a whim, but when I read it later on at home, the only instructions were to “heat and eat.” Really? This big squishy roll of yellow stuff?  WTF?

Gluten-Free Fried Chicken Dinner

Since not being able to eat wheat flour, I found myself really missing fried chicken one night. Summer isn’t summer for me without enjoying fried chicken at one point. So I figured out a way to still enjoy the occasional Winner Winner Chicken Dinner.  If you don’t eat meat, consider switching the chicken out with Portobello mushrooms, tofu, or tempeh, but read up on your allergens first – many “fake meats” aren’t gluten-free.

This is shown sans biscuits and gravy with green beans instead. I was being semi-healhier this time…

Easy Work Lunches – Salads!

I make these and take them to work in something like one of these nifty little things from Target. Since we’re heading into swimsuit season, and most of us love to save money, I thought I’d share these easy, cheap recipes for salads/sandwiches. They’re easily adaptable to make into vegan or gluten-free versions, too!* Now you can never say I didn’t tell you to eat your vegetables.
