Grill and Smoker Recipes

Here in Florida at what I’ve come to refer to as the Family Compound, my sister’s family and my husband and I have been grilling (with propane and on the smoker) several times a week.

Recently, my brother in law James made pork ribs and chicken wings in the smoker.  I’m sharing these recipes here, including James’s custom dry rubs and sauces.

Homemaking on the Road, Part 3 – Meals on Wheels

I’m a cook, which means that I like food. I love buying it, preparing it, smelling it, looking at it, cooking it, plating it, serving it, and eating it, and even cleaning it up. (Probably eating it a little less than the others, otherwise I’d be morbidly obese. But still. Yum.)

When I’m away from home, I like to be able to cook, both for fun and for health reasons. Not many things are more pleasing to me than being hosted and getting to thank my hosts with a meal, or enjoying a familiar dish in an unfamiliar setting.

Planning out what and where you will eat can take some of the stress out of travel, keep you well, and help you stay on budget. Here’s what I do to stay fit, fed, and functional when I travel.

Gluten-Free Eggplant Parmesan

Husband and I have been spending November traveling and seeing family. One recent chilly afternoon here in Georgia, I decided to try my hand at eggplant parm for my parents and sister.

It’s my first time making it, and it came out well! Here’s the recipe.

Kimpossible’s Cheese-y Vegan Nachos

Watching a lot of games this fall and need to feed a crowd? Here’s a dish from my best friend Kimpossible ( a featured model in Hosting With Style the book, available here for $27)

Kim used to make these for us when we were single vegan ladies living 5 minutes away from each other, as munchies for our Packers/Cowboys game days. I still ask her to make them when we have double dates at her place with our carnivorous menfolk. Vegan or not, they’re the bomb for your game time noms.

Kimpossible: Off-Roading and Roughing It in So Cal.

Meet Kimpossible!  Kim has been one of my favorite people and closest friend for several years now. We’ve spent years experimenting with new recipes, working out, and ushering each other through major life changes.  Kim is an “outdoor girl”, and since I’m going camping this summer, I’ve asked her to share a few ideas for camping foods. You’ll see more of her in my book, but for now, she’s gonna tell us about eating healthy, driving jeeps over huge boulders, and gettin’ stuff done.

Tell us about yourself!

I have been working for an environmental engineer for the past 10 years. I have an amazing boyfriend named Randall, and we live together with his 2 kids, ages 12 & 15. We spend all of our free time camping, hiking, and off-roading (“Jeeping”) in the mountains and deserts of Southern California. When we’re not actually gone, we’re planning the next trip.
