Easy Work Lunches – Salads!

I make these and take them to work in something like one of these nifty little things from Target. Since we’re heading into swimsuit season, and most of us love to save money, I thought I’d share these easy, cheap recipes for salads/sandwiches. They’re easily adaptable to make into vegan or gluten-free versions, too!* Now you can never say I didn’t tell you to eat your vegetables.

Your Work Is A Garden Salad

  • 2 cups Kale
  • 3 white button mushrooms, sliced
  • A fewcherry tomatoes (we grow them so I harvest these)
  • A few baby carrots
  • 1 cup Romaine lettuce
  • 1 tbsp shredded basil
  • Optional 1/4 shredded chicken or turkey, if not, add 1/4 of an avocado for good fats
  • Honey mustard or balsalmic vinegarette are delish on this
Summer Veggies
  • 1/4 cup red and green peppers, diced
  • 1/4 cup cucumbers, sliced
  • 1/4 cup Shredded carrot
  • 1/4 cupcherry tomatoes
  • 3 cups romaine lettuce
  • 1/2 cup arugala
  • any dressing is good on this one!

Chicken Caesar Salad

  • 1 – 2 tbsp Caesar Dressing
  • 1/4 c Gluten free croutons (I make my own by toasting diced Udis in the oven) or regular croutons
  • 1/4 c Shredded Chicken
  • 1 tsp grated parmesean cheese
  • 3 cups Romaine or Kale, chopped (makes for easier chopping)
Toss romaine with dressing to coat leaves well. add in croutons, chicken and sprinkle cheese on top.

Spinach and Cranberry

  • 3 cups Baby Spinach
  • 1 tbsp dried cranberries
  • 1 tbsp blue cheese
  • 1 tbsp walnuts
  • Optional raw red onions ( I hate raw red onions)
  • balsalmic vinegarette or raspberry vinagrette dressing are best on this one
Because of the fats in the cheeses and nuts and the sugars in the cranberries, eat this mindfully if you’re dieting.
Lazy Arugala
  • Arugala
  • pumpkin seeds
  • avocado
  • cherry tomatoes
  • honey mustard or balsalmic vinagrette go well on this.

Curried Egg Salad

  • 2 hard boiled eggs, minced or mushed with fork in bowl
  • 2 tbsp Veganaise (real mayo grosses me out but you can use it if  you want)
  • 1 teaspoon yellow curry powder
  • cracked black pepper and a pinch of sea salt
  • 1/4 cup chopped celery

Mix together and serve on bread with romaine as a sandwich or just eat it plain.

Tuna Salad You’ll Really Relish (har!)

  • 1 can white albacore tuna, packed in water
  • 1 tbsp ea relish, dijon or yellow mustard
  • 1/4 cup chopped celery

Mix together and serve on bread with romaine as a sandwich or just eat it plain.

*As always, if you have any food allergies, read dressing lables carefully! Some stabilizers in dressings/ some vinegars are not gluten-free or vegan. So please do research on your dressings before eating.
