Gluten-Free French Toast and Quick Fruit Compote

Let your Awesome Weekend Begin!


Two slices Udi’s gluten-Free Bread

Eggs (one egg coats 2 slices pretty well)

2 tbsp Milk, Almond, or Soy Milk

Scraped Vanilla Bean or GF Vanilla Extract such as McCormick

Grated Cinammon Stick or McCormick Cinnamon

1 tbsp Earth Balance or real butter for flavor and to grease pan

Serve with Aunt Jemima Original or Mr’s Butterworth’s Syrups

Heat pan while beating egss, vanilla, milk and spice together in a bowl. Grease pan and when butter/margarine is bubbling, quickly soak the bread slices in the mixture, coating each side (letting it soak too long makes the bread fall apart).

Cook each side about 3-5 minutes, turning once. Serve hot with desired toppings such as syrup, fruit, or just plain.

Quick Fruit Compote

1 cup berry fruit of your choice (strawberries, blueberries, raspberries etc)

1 tbsp brown sugar

Heat in small sautee pan or microwave, stirring often, until thickened and hot. Serve on top of toast.
