Two slices Udi’s gluten-Free Bread
Eggs (one egg coats 2 slices pretty well)
2 tbsp Milk, Almond, or Soy Milk
Grated Cinammon Stick or McCormick Cinnamon
1 tbsp Earth Balance or real butter for flavor and to grease pan
Heat pan while beating egss, vanilla, milk and spice together in a bowl. Grease pan and when butter/margarine is bubbling, quickly soak the bread slices in the mixture, coating each side (letting it soak too long makes the bread fall apart).
Cook each side about 3-5 minutes, turning once. Serve hot with desired toppings such as syrup, fruit, or just plain.
Quick Fruit Compote
1 cup berry fruit of your choice (strawberries, blueberries, raspberries etc)
1 tbsp brown sugar
Heat in small sautee pan or microwave, stirring often, until thickened and hot. Serve on top of toast.
