Onion Chicken with Rice and Stuff (Gluten-free)

Prep time:  5-10 minutes   Bake time: 45- 60 minutes   Serves: 2

Stream rice, then defrost chicken breasts about 3 minutes/ until just thawed. While chicken is defrosting, dump rice, most of the dressing, broccoli, onions  and mushrooms into a small shallow casserole dish and mix up. Lay chicken breasts in dish, drizzle with remaining dressing, and mix it all together again. Tent with foil and bake at 375 for 45 minutes. Uncover and check chicken temp 7-10 minutes at a time until done (should be 165, white with clear juices).
